Gattò di patate, the Neapolitan potato terrine

Gattò di patate’ is a neapolitan potato terrine. ‘Gattò’ is a Neapolitan word, which comes from the French ‘Gateau’, which means pie.

There are different way to fill this terrine, many people use Neapolitan salami cut into cubes, others only ham, others prefer to use other kind of cheeses; this is the recipe I prefer as the ham along with mortadella gives a beautiful taste, flavor and perfume to the terrine.

Today I have baked it in small terrines, but the usual way to make it is to bake it in a unique ovenproof dish and then cut it into cubes and serve as appetizer too.

Potato terrine

Ingredients:

  • 1 Kg potatoes
  • 2 Eggs, beaten
  • 1 cup homemade breadcrumbs
  • Salt
  • White pepper
  • 150 gr grated parmesan
  • 100 g butter
  • For the filling
  • 75 gr sliced ham
  • 75 gr sliced mortadella
  • 200 gr mozzarella cut into cubes
  • 100 gr smoked provola cut into cubes

Directions:

  1. Boil the potatoes in their skins. Mash them with a potato ricer
  2. Mix them with the beaten eggs, season with salt, white pepper, the parmesan cheese
  3. Grease generously with butter several terrines and coat them carefully with breadcrumbs all around, to prevent the potato mix from sticking to the dish. Using three quarters of the potatoes line the dish, including the sides.
  4. Cover with the rest of the potatoes. Sprinkle the top with breadcrumbs and dots of butter to keep the top moist.
  5. Now in a bowl mix all the ingredients for the filling and spread them on top of the potatoes, well distributed all around

  7. Bake in a preheated oven for at least 45 minutes. If the top is not golden enough put the terrine under the grill for a few minutes.
  8. Rest for 20 minutes before serving. It should be served lukewarm, not piping hot.
